Few\u00a0fresh eggs or dried eggs, limited amounts of butter and other fats, sugar, and chocolate, as well as\u00a0just about everything that was so good, yet\u00a0so\u00a0bad (as in unhealthy) for a person,\u00a0was on the ration. Here is an Eggless Christmas Cake that is easy to make and delicious. The carrots and milk provide the needed moisture.<\/p>\n<p><strong>Eggless Christmas Cake<\/strong><\/p>\n<p>4 oz \u00a0finely grated carrots<br \/>\n2 tablespoons golden syrup (or dark corn syrup)<br \/>\n3 oz sugar<br \/>\n4 oz margarine<br \/>\n1 teaspoon bicarbonate of soda (baking soda)<br \/>\nvanilla essence (extract)<br \/>\nalmond essence (extract)<br \/>\n4\u20146 oz dried fruit (cranberries, apricots, raisins)<br \/>\n12 oz self raising flour<br \/>\n1 teaspoon ground cinnamon<br \/>\n1 small teacup (6\u00a0oz) milk, slightly warmed<\/p>\n<p>Cook the grated carrots and syrup over a low heat for a<br \/>\nfew minutes. Cream the sugar and margarine until light and<br \/>\nfluffy. Stir the baking\u00a0soda into the carrots and syrup<br \/>\nmixture, then beat it into the sugar and margarine mixture,<br \/>\ntreating it as if it were an egg. Add a half teaspoon each of<br \/>\nvanilla and almond extract, and stir in with the dried fruit.<br \/>\nFold in the flour and cinnamon, and add the warmed milk<br \/>\nto. make a moist dough. Put the mixture into a greased cake<br \/>\ntin (or use a fluted\u00a0tube pan\u00a0such as a Bundt\u00ae pan). Smooth the top, and make a deep hole in the centre\u00a0with a spoon if not using a tube pan, to stop the cake from rising too much during\u00a0cooking.
